  • 300 grams of digestives
  • Unsalted butter, 150 g

Filling for Cheesecake

  • 250 grams of white chocolate
  • Full-fat cream cheese, 500 g
  • 100 grams of powdered sugar
  • One teaspoon of vanilla extract
  • 300 milliliters of double cream
  • 250 grams of fresh raspberries

Decorating

  • 150 milliliters of double cream
  • Two tablespoons of powdered sugar
  • One hundred grams of white chocolate
  • Twelve fresh raspberries
  • 10 grams of raspberries, freeze-dried

Directions

Regarding the Biscuit Base

  • Process the biscuits in a food processor until they have a small crumb, then add the melted butter. You may either mix the ingredients in a bowl or pulse the food grinder a few times to blend them.
  • Press down firmly after tipping the biscuits into a springform tin that is 8 inches (20 cm) deep.

Regarding the Cheesecake Filling

  • In a bowl over a pan of simmering water, or in the microwave in short bursts, melt the chocolate completely; let it cool while you do the other steps.
  • Mix the cream cheese, vanilla, and icing sugar in your stand mixer using the whisk attachment until smooth. Whisk until thick after adding the double cream!
  • When finished, add the chilled white chocolate, whisk just long enough to mix, and then fold in the fresh raspberries.
  • Cover the biscuit base with the mixture, level it out, and refrigerate for at least 5 to 6 hours, or overnight if you want it to firm.

Regarding the Decoration

  • Decorate after it’s set. Pour over the melted white chocolate, mix the icing sugar and double cream, and then pipe in swirls!
  • 2D closed star pipework is what I use.
  • After that, I top each swirl with a few fresh raspberries and then freeze-dried raspberries!
